Hello Casper, I am not sure about your question. I was looking at your tree and think you could create an older looking tree by removing the upper part of the trunk. If you look at the recent posting on IBC " wrightia religiosa- mini bonsai", you can get an idea of how your tree could look. It looks like you have numerous branches to select for a new apex.

I think this is something like what Todd is suggesting. I think it would be easily done in one season of growing.
I've never defoliated a Pyracantha. They're pretty tough plants, though, so I'd imagine it would be OK.
Maybe you have another in a pot that you can experiment on????
If you are trying to make smaller leaves, I think when its roots fill the pot you will find that it will develop smaller leaves.
