is there any reason
why i cant just put my tree seed into a full size bon and let it grow?

Dave,
you mean like this - 1981 to 2013 Texas Ebony.
The final pot is the largest pot the tree has lived in.
You may wish to, depending on the size of trunk you want, to use a modified air-pot - colander technique.
Questions, please ask
Also give yourself a fighting chance, use a fast grower.

If by "full size bon" you mean a regular bonsai pot, you can. It will take lots and lots of years though, and will not be as fast as planting them outside and letting them grow unrestricted.
