I'd recommend that you rush down to your nearest public library and check out a book or two on the subject and do some reading before you jump in.
It's tough to give you a bonsai quickie course. Some of us have been doing this for 30 years or more and are still learning how to do it.
It's more than trimming the foliage. You also have to trim the roots (and you're better off -- especially as a rank beginner -- not doing them both in the same year). Then, because the branches probably aren't exactly where you want them to be for the best bonsai shape, you need to wire the branches.
You don't need to use a bonsai pot, but part of what you saw and liked at that show was the combination of the tree and its pot. It isn't the same thing just jamming a tree into any old pot.
Most of us try to avoid moss growing willy-nilly in our pots. We add it just before a show for the effect, but it's not something we want day in and day out because it affects how you water the tree (like you need to water too much to keep the moss healthy and he tree suffers).
There's quite a lot to doing bonsai. So rush out and get yourself some books, and while the snow is melting around you there in Virginia, do some reading.
