My personal taste and sensibilities, for the shape of the trunk and the color of the trunk, the pot it is currently in is a better fit to my eye than any of the three choices.
However if I had to choose one of the 3, I would choose #2.

Also Lycium Barbarum is interesting. I'm not familiar with this plant and don't think I've seen it used as bonsai before.
