Hi and welcome to IBC.
1. Do Bonsai plants die?
Basically Bonsai plants are living plants, so yes they will eventually die of old age or if mistreated or if continually weakened.
2. Do bougainvillea with its leaves gone die?
That part is not clear enough.
> Do you prune it ( ie. did you cut the leaves yourself )?
If you cut if off by yourself, then if the tree is healthy it should bud back
> Did the leaves fall off by themselves?
> Did the leaves turn brown or yellow or curled up before falling off?
If you did not removed the leaves and it fell off by itself, then there might be an issue somewhere.
It might not be dead yet, but it could be weakening and will eventually die.
Without more info or maybe an image we won't be able to give much more info.

I live in a non-tropical climate and defoliate by bougies in the fall when I bring them in and the spring when I take them out with no ill effects. While they are evergreens in a tropical climate they can be deciduous in colder climates.
