Shade for maples.
Which would be best shade for my maples, morning sun and afternoon shade or 35% shade all day?

As close to full sun as possible, especially if you want fall color. To mitigate leaf scorch, protect them from wind, not sun. Look for a product called Pro-TeKt, potassium silicate. It strengthens the leaves. I use it about once a month. Very high dappled light shade under a tree would be ideal.

Agree with Iris, (tho I don't use any leaf spray protection, as I like to keep it natural) but add that watering is the most critical aspect. If their feet dry, they fry! My maples are either dapple shaded by a full grown birch or in the shadow of my house for the hottest part of the day.

To clarify, potassium silicate is not a spray. It is diluted and watered in, usually added to fertilizer solution. Most of our trees have silica in their cell walls. The potassium silicate gives them extra silica to make the cell walls stronger. It is like taking extra calcium to strengthen your bones.
