I'm thinking, it's going to take a few seasons just to get it good and healthy...

The 'problem' is that both trunks are the same girth. That would styling it a s a twin trunk unsatisfactory. I would have some sacrificial branches on one trunk and let it get some girth and added height.

The tree has too nice a Nebari to cut off one of the trunks, great material.

I agree with arihato, i wiuld cut back alot on the smaller trunk and cut the other one in a way so it can grow a lot in height and girth to cut back to smaller size later on.
Nebari should grow nicer too that way, good material
