Beginners hornbeam

I purchased some hornbeam hedging plants last fall, planted them out and they are now growing vigorously. At what point should I begin the process of converting them into bonsai trees?

You should have started already, by looking at the roots, and placing / trimming them strategically.
Next step is trunk. What size, shape are you after
