Bonsai categories
There are plenty of different bonsai categories. One of my favourite is Flowering and Fruiting. Nevertheless there are trees that could be cultivated just because of specific colour/shape of their leaves. Such as this Malus x purpurea. I think it deserves to have a category of its own: LEAFING
I am sure there must be a good number of other possible candidates to join this category. Maples?
Any other plant?

GINKO !!!
I have yet to see a ginko that looks really good naked...
I think every single ginko is grown simply for its leaves...
