Eliminating unwanted trunks in my young Serissa

I'm new to Bonsai (but I am hooked), so please forgive any stupid questions.
I recently acquired a small Serissa that has a group (5) trunks emitting from the same root system. My plan is to move the tree into a growth pot with the objective of enlarging two of the trunks I've identified as keepers and creating a twin trunk tree. My question is: When and how is the best time to remove the unwanted trunks? Should I simply cut them off as soon I move it to a growth pot or is there a better approach to accelerate the growth of the 2 keeper trunks?  Also ... what's the best soil to use in a growth pot?

Richard,

To help you the group will need an image.

The serissa can be Chinese, Japanese, Variegated, Double or Single flower and so on.
Some cultivars are more difficult to look after.
