So I'm really drawn to the two trunk design in bonsai... but i have a question; is this something you can achieve with any tree, or does the tree naturally have to grow this way?

What do you mean with a two trunk design? Please show an example.

Somewhere here there is a thread showing how Bill Valavanis splint the trunk of a juniper (?). It was very impressive.

I don't show how I did it, but search for my posts about my pear tree to see what a split trunk tree can grow up to look like.

And yes, many trees come that way from the beginning.

Twin trunks can come one tree that has a suitable lower branch that can become a trunk or from planting two trees very close together as young trees and have them grow together.
