I think your second idea will result in a much better tree. You can use both the large and small trunks for a dynamic, windswept twin trunk.

The first idea is alright, but it feels a bit like you are making a copy of another tree, and will be taking away a lot more of the plant to get that result.

My advice is based on my personal preference for bonsai trees whose shape hasn't been too forced upon them.
